Sunny Days and Car Shows

Being married to a mechanic means we go to a lot of car shows. I really don't mind though, I like to drool over the nice Camaro's, old Mustangs (anyone want to give me a Boss 302?), Challengers and all the other older cars. Sigh... Oh how I wish I had one of them.

We took Jakah to the Snohomosh Kla Ha Ya Day's car show sunday morning. There were over 200 cars there! We had a good time walking around and looking at the cars. After that we went over and walked around the street fair and ate fair food that we don't normally get (I am pretty sure Kettle Korn is the most delicious thing ever!)

6 years....

6 years ago this weekend Casey and I were contemplating hopping a plane to Vegas and eloping. But instead we stayed and went on with our wedding.

My family flew in from both Michigan and Arizona for the wedding. And of course when there is that much family around things are sure to happen. And low and behold, my younger cousin decided to inform my youngest sister the deep, dark, family secret. My youngest sister  is actually my half sister. She has a different dad. Of course all of this came out days before my wedding. So the entire family was fighting and trying to not let anymore people know the secret. It was a fiasco! You could cut the tension at the wedding with a knife.

Luckily there was enough alcohol that I didn't care. I had planned the details of that day out for a year and a half and I was determined to let nothing ruin it! (it cost a lot people!) I don't remember all the details that I had fretted about. The day when by in a blur. I remember it being so hot. Because we had an outside wedding we chose the only weekend in Washington to have a 10% chance of rain. (It has yet to rain on my anniversary since!)

So here we are, 6 years later. So many things have happened in the last six years, yet it seems like only yesterday we were married. We have traveled the world together.Remodeled our house (an on going process), been thru a strike, lost best friends, made new friends, dealt with grandparents dying (I miss you Pop!) and able to be at the hospital for all of our nieces and nephews being born (4 to be exact!). We have become parents and are learning the ropes of parenthood, and (as cheesy as it sounds) made our house a home.

I wouldn't trade the last 6 years of our lives for anything, and I can't wait to see what the next 60 years bring for us.

Thank you Mr. Neilson for the last 6 years.

Heart Healthy Diet... say what???

2 weeks ago I went to the Dr for my yearly exam. Nothing out of the ordinary really except they decide to do a cholesterol test. Ok no problem. Go over and have my blood drawn (which for the first time ever I did not pass out! Yay!)

Fast forward to Sunday, I finally check my mail and I have a letter from the Dr. "You have high cholesterol, you need to make diet and exercise changes. Please come in and get re-checked in 6-8 weeks"

WTF! I am 29 years old! And here I have horribly high cholesterol. Ugh Seriously! So for the nextt 6-8 weeks my diet consists of oatmeal or cheerios for breakfast, tons of fruits and veggies (which we have already been eatting since we cut out all processed foods), Chicken, Walnuts and Almonds (but not too many they are high in calories) and Fish Oil pills (because of course I don't eat seafood, hate the stuff) Oh and of course cutting out butter (Oh how I love thee)

Seriously I never thought that at 29 I would have to go onto a heart healthy diet and worry about my cholesterol. Maybe my results were a fluke. I did have coffee with flavored creamer before the test. Because I didn't know they would be testing........

So hopefully I will lose some weight (I have 10 lbs to go to pre-pregnancy weight! Which I have been working on losing - hint cutting out all processed foods and only eatting healthy) and my cholesterol will go down.

Pita Pizzas

I have been missing for a few months. Havn't really had much to say. I havn't been baking because we are trying to not eat sweets. And I have had a lot going on in life that hasn't made me very happy. I didn't want to go into on here or have my yucky blah attitude come thru either. But hopefully I will  be back. We have done a lot of things in the past months so I should have lots to tell you about.

Yesterday I made Pita Pizzas for dinner. Normally I make these on the BBQ but since it was raining I made them with the broiler. They are super easy and yummy.

All you need is some pita bread, pepperoni, spaghetti sauce and mozzerella cheese. (you can add whatever you like to these, this is what my husband likes on his pizza lol)

First you melt some butter and spread it on the pita. Slip it into the broiler and let it get brown.
(pre-browning)

Once brown, take out and turn over so crispy side is down. (makes a yummy crust!) And spread spaghetti sauce on the top. And then add your toppings.

Put back into the broiler until cheese is melted and pizza is hot. Usually about 5 minutes (unless you are me chasing a toddler around and forget all about them and burn them to a crisp and have to start over)
