Monkey bread is so easy to make, but seems to make too much, so I decided to try making it into muffins.
This recipe can be used for a regular batch of monkey bread also
Monkey Bread Muffins
Ingredients:
3 (12 oz) packages of refrigerated biscuit dough
1 cup of granulated sugar
2 teaspoons cinnamon
1 cup (2 sticks) butter
1 cup brown sugar
1/2 cup chopped walnuts (optional)
1/2 cup raisins (optional)
Heat Oven to 350 degrees. Put foil liners into muffin tin (I figured foil would be better than paper)
Mix sugar and cinnamon in a plastic bag. Cut biscuits into thirds, and then cut into smaller pieces. Shake biscuit pieces in plastic bag and add all pieces to 1 muffin cup.
Continue until all biscuits are gone or muffin tins are full.
In a small sauce pan, melt the butter and brown sugar over medium heat. Boil for 1 minute.
Spoon 1 teaspoon of mixture over each muffin tin
Bake at 350 for 17 minutes.
Cool and eat! Muffins should just pull apart
These were so good for breakfast! And I think next time I will make a cream cheese frosting to drizzle on the top and make more like a cinnamon roll muffin!

I love monkey bread, and I think baking it in muffins pan is a wonderful idea!
