Strawberry Lemonade Poke Cake

Ah spring is here! Its been getting warm out, and there has been a lot of playing outside! I wanted to try out an easy refreshing recipe but couldn't quite find what I was looking for. So I came up with my own.

Strawberry Lemonade Poke Cake


Ingredients:
White Cake Mix
1 box Strawberry Jello
3/4 cup Frozen Lemonade (from concentrate)
3/4 cup Ginger Ale
1/2 cup boiling water
Cool Whip
Strawberries

Make cake mix according to box. I used a Betty Crocker White cake mix

Bake for 30 minutes or until toothpick comes out clean

While baking, mix together Strawberry Jello, Frozen lemonade, Ginger Ale, and Boiling water.

Once cake is done baking, remove from oven and poke entire cake with a fork, about 1 inch apart.

Poor jello mixture on top of cake, and let cool for at least an hour. (I put mine into the fridge)

Top entire cake with cool whip (or a frosting of your choice), The cool whip was light and airy

Add fresh cut strawberries to the top! You could also garnish with lemon peel









This cake was light, refreshing, tangy but not too much and so good! Perfect for the summer!

  2. I love jello cake, which is what my family always called it, however my husbands family calls it poke cake. It's been to long since I have had some, need to make some soon. My favorite cake for summer for sure.

    1. I don't see why you couldn't use the sugar-free jello, diet ginger ale, and sugar free country time maybe? Not sure what is out there for sugar free lemonade :)

  8. I made this cake yesterday for our daughter's 3rd birthday. It was awesome! I actually made it a layered cake with whipped cream and strawberries as the filling. Then I "frosted" the whole thing with whipped cream and topped it with more strawberries, then kept it in the fridge for awhile. It was a HUGE hit! Thank you
