Red Velvet White Chocolate Chip Cookies - Pinterest I Did It #4

I found this recipe on Pinterest  and have been waiting for the perfect time to make it. We had a family dinner on Saturday and decided to take these for dessert!

They were so yummy!

Red Velvet White Chocolate Chip Cookies

1 1/2 cup of all purpose flour
2 1/2 tbsp cocoa powder
1 tsp cornstarch
3/4 tsp baking powder
1/4 tsp salt
1/2 cup salted butter, softened
1 cup granulated sugar
1 tsp white vinegar
1 large egg
1 1/2 tsp vanilla extract
1 1/2 tsp red food coloring
3/4 cup white chocolate chip, divided

Pre-heat oven to 375 degrees.
In a mixing bowl whisk together flour, cocoa powder, cornstarch, baking soda and salt. Set aside
Add butter and sugar to an electric stand mixer (or a bowl to mix it in) Add vinegar and blend at medium speed for 3-4 minutes or until pale and fluffy.
Add egg and mix until combined
Add vanilla and food coloring, mixing until combined
Slowly add dry ingredients, just until blended
Mix in white chocolate chips
(The original recipe has you mix in half the white chocolate chips. If you want the white chocolate chips to show and look fancy you add the rest to the spoonfuls of dough before you bake them. I tried this and my chocolate chips browned. Still look pretty though)

Drop cookies by spoonful onto a greased cookie sheet.

Bake for 9 - 11 minutes (I did 10 minutes)
