Even though we are having an AMAZING fall here. No seriously it hasn't rained since August I think! Unheard of in Washington! You can definitely tell its fall. The air is crisper, the leaves are falling off the trees, there was frost on my car this morning!
And fall always gives me the urge to bake. Well to bake even more than normal. I haven't been baking cause I am trying to lose the last of the baby weight. 4 more lbs to go to pre-Jensen and then 10 lbs to pre-Jakah! WOOHOOO!
But the urge to bake was to great yesterday. After seeing a recipe for Apple Cider Spice Cake with Apple Butter Frosting (found on Pinterest but the original recipe is from Bird On A Cake)
It looked DIVINE!!! Seriously!!!
But then I got to thinking. And obsessing, and seriously couldn't get it out of my head. I was trying to figure out another way to make a version of this cake. Because I am lazy and didn't feel like dragging my kids to the grocery store for the ingredients.
Anyways I came up with my own recipe for one. At least I think its my own, I can't find it on the internet.
Apple Cider Cake with Apple Butter Frosting
1 box of white cake mix
1/3 cup of applesauce
4 packets of spiced apple cider mix
Mix all ingredients together and bake at 350 for 30 minutes. I did a 9 x 13 sheet cake
Let cool. and Frost
Apple Butter Frosting (recipe is from Bird On A Cake, I just used less powdered sugar and butter)
1/3 cup of apple butter
1 1/4 cup of powdered sugar (Its all I had)
1/2 cup of butter
1/4 teaspoon of cinnamon
1 teaspoon of vanilla
The frosting turned out to taste a little tart, kinda like green apples, but when it was on the cake it was yummy! The sweetness of the cake made up for the lack of sweet in the frosting. If I had more powdered sugar (which I thought I did) the frosting would have been sweeter.
Although I really like how it turned out. So maybe I wouldn't change anything!
PS Yes my pictures suck because its like 6:30 in the morning and no kids are helping me! :) And I am a crappy food photographer. BUT I promise you this cake is good!
