These cookies just remind me of fall, Halloween and Thanksgiving. I have posted this recipe before, but had crappy pictures so decided to post it again.
The pictures still aren't that great, but better than last time.

Pumpkin Cream Sandwiches
From Real Simple - November 2007
Recipe is for 8 sandwiches
Ingredients for the cookies
3 tablespoons softened butter
1/3 cup brown sugar
1/4 cup granulated sugar
1/2 cup canned pumpkin puree
1/2 teaspoon vanilla
1 large egg
1 cup all purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon pumpkin pie spice
1/4 teaspoon salt
Ingredients for the cream
2/3 cup cream cheese, room temperature
1/4 cup heavy cream
1/4 cup confectioners' sugar
Heat oven to 375 degrees
Beat the butter, brown sugar and granulated sugar in a bowl until smooth.
Add the pumpkin, vanilla, and egg. Beat until combined.
Combine the flour, baking powder, baking soda, pumpkin pie spice and salt in a separate bowl.
Slowly add the flour mixture to the butter and sugar. Beat on medium speed until combined.
Spoon heaping tablespoons of the mixture 2 inches apart onto a greased baking sheet.
Bake until puffed and cooked through, about 10 minutes.
Let cool for 5 minutes.
Clean mixer, as cookies bake, beat the cream cheese, heavy cream and confectioners' sugar until smooth and spreadable.
Spread the flat sides of the cooled cookies with the cream mixture.
Top with another cookie
Sometimes I just top the cookies with the cream mixture and eat them that way.
