Throwback Thursday

For a couple weeks I have seen a few friends doing something called Throwback Thursday on Facebook. It sounded like fun so I thought I would share an old picture here.

This is my husband and I in Vegas in 2009. We were there for his sisters wedding! It was before we had kids, actually I found out I was pregnant a month later. No, Jakah was not something we brought back from Vegas Ha ha!

It was such a fun trip! I want to go back :)

Angel Food Bites with Chocolate Ganache and Toasted Coconut

Wow is it just me or has this week flown by! I feel like I haven't had time to do anything! But of course I found time to bake. If you follow me on Instagram or Facebook (which you should of course!) You saw a picture I posted of Angel Food Bites with Chocolate Ganache and Toasted Coconut. Yum!

This recipe is super simple, but if I were to make it again (which I will) I would use regular size muffins instead of mini muffins. I feel like there wasn't enough angel food cake.

Angel Food Bites with Chocolate Ganache and Toasted Coconut
1 box of Betty Crocker Angel Food Cake mix
1 bag of milk chocolate chips
1/2 cup of heavy cream (I used vanilla half and half)

Make cake mix according to directions on the box. So basically add the water (I think its one cup)
Mix together.
Put one spoonful into mini muffin papers
(I ended up having the use a TON of Pam on the papers in order to get them not to stick)
Bake for 12-15 minutes - Until the tops are light brown

Chocolate Ganache:
1 bag milk chocolate chips
1/2 cup heavy cream (I used vanilla half and half)

At first I was intimidated by making this. I always assumed it was super hard cause it seems so fancy. But it was SO EASY!
Melt 1/2 bag of chocolate chips into a pan with heavy cream (I used half and half). I really didn't measure this out, just added more half and half to make it thinner and more chocolate chips to make it thicker. As soon as it was thick enough to my liking I just dipped the tops of the mini muffins in it and voila!

For the toasted coconut, just heat oven to 350. Spread coconut onto a pan and put into oven for about 5 minutes. Stir around. Toast longer if you want it a little browner.

I tried to dip the bites into the coconut also, but it didn't really stick so I just sprinkled it on to.

This got rave reviews at work, we even gave some to clients since I had made so many. It was delicious and super easy!

Friday Funnies # 26

TGIF!!! Happy Friday!

How was your week? The other girl at work has been sick all week, so I've been pulling double duty and doing both jobs. It's not bad, and makes the time go faster but man it's hard to get everything done in the few hours I am there at night!

This week my kids decided they hate sleeping. Neither has slept threw the night, they have both been up at an ungodly hour, and no one is taking naps! I think the baby might be cutting some teeth. So to say I am exhausted is an understatement.

Seriously I was excited to go to the dentist yesterday and get a cavity filled. Not because I love getting it done (although I am used to it since it happens quite often) But no, because it meant AT LEAST an hour of peace and quiet. No kids asking me for things or crying, not doing chores, nothing. Just laying in the chair getting my tooth fixed. Oh an I didn't pass out from the needle! So that's always good news!

A Peek Into Our Week # 5

Happy Wednesday!

Hope everyone is having a good week! This morning Jakah decided to come into our room at 5:25, flip on all the lights and proceed to tell me that his dad was at work. Mentally I was thinking No Shit Sherlock, but instead I just sent him back to his room. Of course he had woken up Jensen in all this too. So we've been rocking since 5:25 this morning.  And I really hate mornings, and being woken up.

Dear god I hope they take a nap today! Jakah hasn't napped since we switched his bed over to a big boy bed. And yesterday he woke his brother up again, so Jensen had a 45 minute nap all day!

Sigh... Happy Wednesday!

This last week the boys and I were hit with the awful flu! It was horrible! Luckily I only had it for about 24 hours, the boys didn't get so lucky. It was my first time being sick and taking care of sick kids. It sucked! My poor boy actually fell asleep on the couch, that NEVER happens.

I spent a few days doing 1,876 loads of laundry, steam cleaned the carpets and lysoled the heck outta everything to get rid of the flu.

We also played some basketball (before we all got sick) Today is our last session of toddler sports, but I heard they are opening up another session, so I'll sign Jakah up for it again. At least it gets us out of the house and playing with other kids.

We had a tough 2 days of sitting in time out. Over stupid stuff. Looking back it was right before he got sick, so maybe that plays into it. Or it could be because he is three.

I went to work and did some tax returns. I don't like just giving out advice because I don't have the tax laws memorized. They change so often there is no point. But this time I did give out advice to my sister in law, who then told everyone what I said. I hoped and prayed I was right, and as soon as I got to work I looked it up. YES I was right! WOOHOOO
By the way this is about educator credits, so if you are a teacher you can take a credit of $250 for supplies you buy for your classroom. But many people don't know that you can write off the rest (anything over the $250, which for most teachers is a lot) on your itemized deductions.

Now that I have put most of you to sleep with tax laws....

We had some really nice spring like days outside. We've spent most the time playing at the park, or playing outside with our trucks. This is the first time Jensen has gotten to ride in the Lowe's race car. This picture makes me think SWAG! Ha ha!

While playing outside Jakah proceeded to pick up the older neighbor girl and give her rides in his jeep. Such a ladies man already

Jakah also discovered the guitars from rock band downstairs. He then proceeded to tell me he was ready to rock and roll. Silly boy!

Friday Funnies # 25

Happy Friday! How was everyone's Valentine's day? I had great, grand plans for my boys but unfortunately we were struck down with the flu. So we spent Valentine's day in our jammies watching movies, while I cleaned up throw up and diarrhea and did 8 loads of laundry. My husband ended up working late, but he still brought me flowers :) What a sweet guy!

So who needs a laugh?!

A Peek Into Our Week # 4

Happy Hump Day! How is everything going this week? It's been a pretty slow, normal week here.

We had a day where the baby poop exploded all over everything, found out I didn't bring a change of clothes with me and so he had to come home naked. Of course he fell asleep in the car seat, so he napped naked also. I don't think he minded

He has also figured out how to pull himself to standing, at 8 months (oh yeah he turned 8 months this week!) He now thinks he can walk, and just lets go of things. Of course this ends badly and he falls over.

I received my giveaway prize from Gfunkified. My son was so excited about the deliveries and couldn't wait to open and see what he got. Because of course everything delivered to the house is for him.

We went to an indoor playground birthday party. Jensen tried out the swing for the first time, and Jakah used the excellent manners I taught him and proceeded to eat the cake in one bite.

I had a S'mores bar / Golden Graham off at work, which I won.

We turned Jakah's crib into a big boy bed. So far nights have been good, but good bye nap time and the hour I had alone!
